BBQ Chicken Quesadillas – FF

Ingredients

Prep
  • 3 green onions optional
  • 4 C cooked shredded chicken deli rotisserie
  • 2 C shredded cheddar jack cheese
  • 3/4 C BBQ sauce
On Cooking Day
  • 12 flour tortillas fajita size
  • 1 jar salsa
  • 1 bag tortilla chips

Instructions

To Assemble
  1. Chop green onions and add to large zipper bag with remaining ingredients.
  2. Thaw before cooking.
To Cook
  1. Equally scoop chicken mixture into each tortilla and fold in half like a taco.
  2. Place quesadillas on large baking sheet sprayed with non stick spray. Spray tops of quesadillas also. Bake at 400 degrees for 15 – 20 minutes or until cheese is melted.
  3. Serve with chips and salsa.
