Ingredients
Prep
- 4 boneless chicken breasts
- 1/2 t chili powder
- 1/4 t ground ginger
- 2 t curry powder
- 1 C frozen onion
- 3 t minced garlic
- 14 oz can coconut milk
- salt and pepper to taste
- 1/2 C heavy cream
- 1 T cornstarch
On Cooking Day
- 1 T dried basil
- 2 pkg frozen rice steamer
- 6 C salad greens
Instructions
To Assemble
- Add first 8 ingredients to large zipper bag. Zip to seal and squish around to mix. Mix heavy cream and cornstarch in a small bowl with lid.
To Cook
- Add prepped chicken to slow cooker. Cook on low for 4-6 hours.
- When done, remove and shred chicken. Turn slow cooker on high and mix in cream mixture. Cook for 20-30 minutes or until thickened. Add chicken back in and garnish with basil.
- Cook rice according to package directions and serve with chicken.
- Serve with side salad.
