Slow Cooked Basil Chicken with Coconut Cream Sauce-C

Ingredients

Prep
  • 4 boneless chicken breasts
  • 1/2 t chili powder
  • 1/4 t ground ginger
  • 2 t curry powder
  • 1 C frozen onion
  • 3 t minced garlic
  • 14 oz can coconut milk
  • salt and pepper to taste
  • 1/2 C heavy cream
  • 1 T cornstarch
On Cooking Day
  • 1 T dried basil
  • 2 pkg frozen rice steamer
  • 6 C salad greens

Instructions

To Assemble
  1. Add first 8 ingredients to large zipper bag. Zip to seal and squish around to mix. Mix heavy cream and cornstarch in a small bowl with lid.
To Cook
  1. Add prepped chicken to slow cooker. Cook on low for 4-6 hours.
  2. When done, remove and shred chicken. Turn slow cooker on high and mix in cream mixture. Cook for 20-30 minutes or until thickened. Add chicken back in and garnish with basil.
  3. Cook rice according to package directions and serve with chicken.
  4. Serve with side salad.
