Ingredients
Prep
- 1 can black beans
- 1 C uncooked rice
- 1 C frozen corn
- 16 oz salsa mild
- 16 chicken tenders
- 2 t chili powder
- 2 t oregano
- 1 t ground cumin
On Cooking Day
- 1 C chicken broth
- 1 1/2 C shredded Mexican cheese
- 8 C salad greens
- 2 avocados
Instructions
To Assemble
- Rinse and drain black beans add to 9x13 baking dish along with next 3 ingredients, mix well. Top with chicken and sprinkle with spices (chili powder, oregano, cumin).
To Cook
- Uncover and pour chicken broth over chicken and rice. COVER and bake in a 400 degree oven for 45 minutes or until chicken and rice are cooked through. Sprinkle with cheese, return to oven for 2 minutes to melt cheese before serving.
- Serve with sliced avocado and salad.
