Ingredients

Prep
  • 1 can black beans
  • 1 C uncooked rice
  • 1 C frozen corn
  • 16 oz salsa mild
  • 16 chicken tenders
  • 2 t chili powder
  • 2 t oregano
  • 1 t ground cumin
On Cooking Day
  • 1 C chicken broth
  • 1 1/2 C shredded Mexican cheese
  • 8 C salad greens
  • 2 avocados

Instructions

To Assemble
  1. Rinse and drain black beans add to 9×13 baking dish along with next 3 ingredients, mix well. Top with chicken and sprinkle with spices (chili powder, oregano, cumin).
To Cook
  1. Uncover and pour chicken broth over chicken and rice. COVER and bake in a 400 degree oven for 45 minutes or until chicken and rice are cooked through. Sprinkle with cheese, return to oven for 2 minutes to melt cheese before serving.
  2. Serve with sliced avocado and salad.
