Baked Salmon and Pineapple - CE

Ingredients

Prep
  • 20 oz can pineapple slices
  • 6 salmon fillets
  • 1/2 bunch fresh parsley
  • 1/2 C butter
  • 1/3 C honey
  • 2 T minced garlic
  • 4 T lemon juice
  • salt and pepper to taste
On Cooking Day
  • 2 bag steamers brown rice
  • 20 oz frozen green beans

Instructions

To Assemble
  1. Drain pineapples and place in single layer in 9x13 baking dish.
  2. Place salmon filets over pineapple slices.
  3. Chop parsley and add to small bowl.
  4. Melt butter and add with next 4 ingredients to parsley and mix well. Spoon over each salmon filet. Cover with foil.
To Cook
  1. Bake covered in 400 degree oven for 18-25 minutes or until fish is cooked through.
  2. Cook green beans and rice according to package directions.
