Ingredients
Prep
- 20 oz can pineapple slices
- 6 salmon fillets
- 1/2 bunch fresh parsley
- 1/2 C butter
- 1/3 C honey
- 2 T minced garlic
- 4 T lemon juice
- salt and pepper to taste
On Cooking Day
- 2 bag steamers brown rice
- 20 oz frozen green beans
Instructions
To Assemble
- Drain pineapples and place in single layer in 9x13 baking dish.
- Place salmon filets over pineapple slices.
- Chop parsley and add to small bowl.
- Melt butter and add with next 4 ingredients to parsley and mix well. Spoon over each salmon filet. Cover with foil.
To Cook
- Bake covered in 400 degree oven for 18-25 minutes or until fish is cooked through.
- Cook green beans and rice according to package directions.
