Ingredients
Prep
- 3 zucchini medium size
- 2 T olive oil
- 1/2 C grated Parmesan cheese
- salt and pepper to taste
- 1/2 C panko bread crumbs optional
- 1/2 t garlic powder
- 1 T dried parsley flakes
On Cooking Day

Instructions
To Assemble
- Chop zucchini into 4 inch spears and add to large zipper bag with olive oil. Mix remaining ingredients in a small bowl with lid.
To Cook
- Place zucchini spears on large baking sheet sprayed with non stick spray and pour crumb mixture over top.
- Bake in a 400 degree oven for 15 minutes or until desired doneness.
