Ingredients
Prep
- 1 lb baby gold potatoes
- 20 oz broccoli florets
- 1 1/2 lb frozen meatballs
- 4 oz cream cheese
- 1 C half and half
- 2 T ranch seasoning
- 1 T dried parsley flakes
On Cooking Day
- 10 C salad greens
Instructions
To Assemble
- Chop potatoes into bite size pieces and add to large mixing bowl with broccoli and meatballs.
- Mix remaining ingredients in a blender and pour the large bowl. Gently mix to coat everything.
- Pour mixture into baking dish sprayed with non stick spray. Cover with foil.
To Cook
- Bake covered in a 375 degree oven for 40-50 minutes or until potatoes are tenders.
- Serve with salad.
