Baked Creamy Ranch Meatballs – C
potatoes, broccoli and salad

  • beef, kid favorite, one pan

Ingredients

Prep
  • 1 lb baby gold potatoes
  • 20 oz broccoli florets
  • 1 1/2 lb frozen meatballs
  • 4 oz cream cheese
  • 1 C half and half
  • 2 T ranch seasoning
  • 1 T dried parsley flakes
On Cooking Day
  • 10 C salad greens

Instructions

To Assemble
  1. Chop potatoes into bite size pieces and add to large mixing bowl with broccoli and meatballs.
  2. Mix remaining ingredients in a blender and pour the large bowl. Gently mix to coat everything.
  3. Pour mixture into baking dish sprayed with non stick spray. Cover with foil.
To Cook
  1. Bake covered in a 375 degree oven for 40-50 minutes or until potatoes are tenders.
  2. Serve with salad.
