Ingredients
Prep
- 6 boneless chicken breasts
- 1 C apricot preserves
- 2 T butter
- 3 T apple cider vinegar
- 1 1/2 T cornstarch
- 2 T dry onion soup mix
- salt and pepper to taste
On Cooking Day
- 2 bag frozen rice steamers
- 16 oz frozen broccoli florets
- 1 pkg dinner rolls
Instructions
To Assemble
- In a small bowl, microwave butter until just melted.
- In a large bowl, combine vinegar and cornstarch. Stir until dissolved. Mix in preserves, melted butter, and soup mix. Add chicken and coat well.
- Place each chicken breast in a small square of foil. Divide remaining preserve mixture and pour evenly into packets. Add another square of foil on top and seal edges.
To Cook
- Bake in 375 oven for 40 minutes or until chicken is cooked through.
- Prepare rice and broccoli according to package directions.
- Serve with dinner rolls.
