Apricot Chicken Foil Packets – 5

Prep
  • 6 boneless chicken breasts
  • 1 C apricot preserves
  • 2 T butter
  • 3 T apple cider vinegar
  • 1 1/2 T cornstarch
  • 2 T dry onion soup mix
  • salt and pepper to taste
On Cooking Day
  • 2 bag frozen rice steamers
  • 16 oz frozen broccoli florets
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. In a small bowl, microwave butter until just melted.
  2. In a large bowl, combine vinegar and cornstarch. Stir until dissolved. Mix in preserves, melted butter, and soup mix. Add chicken and coat well.
  3. Place each chicken breast in a small square of foil. Divide remaining preserve mixture and pour evenly into packets. Add another square of foil on top and seal edges.
To Cook
  1. Bake in 375 oven for 40 minutes or until chicken is cooked through.
  2. Prepare rice and broccoli according to package directions.
  3. Serve with dinner rolls.
