Ingredients
Prep
- 1 1/2 lb ground turkey
- 1 C can crushed tomatoes
- 1 t garlic powder
- 1 T chili powder
- 1 t ground cumin
- 1 C cilantro chopped
- 1 C frozen chopped onion
- 1 C frozen corn
- 2 C corn meal
- 1 egg
- 1 1/2 C beef broth
- 1/2 C shredded Colby jack cheese
On Cooking Day
- 1 C shredded Colby jack cheese
- 1 can black beans
- 2 avocados
Instructions
To Assemble
- Combine turkey and next 7 ingredients in a large zipper bag. Zip to seal and squish around to mix.
- Mix last 2 ingredients in a medium container with lid.
To Cook
- Pour contents of turkey bag into slow cooker and pour corn meal mixture over the top. Cook on low for 6 - 7 hours, or until corn meal 'tamale topping' is fairly firm.
- Top with 1 cup pepper jack cheese, if desired.
- Cook black beans according to package directions.
- Serve with sliced avocado.
