Almost Tamales
Black beans and sliced avocado

Ingredients

Prep
  • 1 1/2 lb ground turkey
  • 1 C can crushed tomatoes
  • 1 t garlic powder
  • 1 T chili powder
  • 1 t ground cumin
  • 1 C cilantro chopped
  • 1 C frozen chopped onion
  • 1 C frozen corn
  • 2 C corn meal
  • 1 egg
  • 1 1/2 C beef broth
  • 1/2 C shredded Colby jack cheese
On Cooking Day
  • 1 C shredded Colby jack cheese
  • 1 can black beans
  • 2 avocados

Instructions

To Assemble
  1. Combine turkey and next 7 ingredients in a large zipper bag. Zip to seal and squish around to mix.
  2. Mix last 2 ingredients in a medium container with lid.
To Cook
  1. Pour contents of turkey bag into slow cooker and pour corn meal mixture over the top. Cook on low for 6 – 7 hours, or until corn meal ‘tamale topping’ is fairly firm.
  2. Top with 1 cup pepper jack cheese, if desired.
  3. Cook black beans according to package directions.
  4. Serve with sliced avocado.
