Try this “no cook” dinner this week. Black Bean Tacos with Cilantro Slaw! So super easy and helps you skip the drive thru for dinner.
Sprinkle with some salsa and dinner is served! OMG this looks amazing!!! Tastes amazing too :)
Servings: 4-6 |
Ingredients
Prep
- 3 can black beans drained & rinsed
- 1/2 t cumin
- 1 jalapeno (optional)
- 1/2 cup chopped cilantro (or parsley)
- 16 oz cole slaw mix shredded
- 1/4 cup lime juice
- 2 T mayonnaise
- salt & pepper to taste
On Cooking Day
- 1/2 cup crumbled feta cheese
- 1 pkg flour tortillas taco size
- 6 cups salad greens
Instructions
To Assemble
- Mix first 2 ingredients in a large bowl with lid.
- Chop cilantro and jalapeno and add to large zipper bag.
- Add next 4 ingredients to same zipper bag. Zip to seal and squish around to mix.
To Cook
- Microwave black beans until warmed through.
- Warm tortillas (covered) in microwave until warm.
- Assemble tacos with black beans, feta cheese and slaw.
- Serve with green salad.
