Keto Pork Loin and Gravy
The best part of this Keto pork loin is that it can all be cooked in the Instant Pot! This is perfect for those, like me, who somehow always wait until the last minute to remember to get dinner going. If you do not have an Instant Pot, you can absolutely still cook the Keto pork loin in the slow cooker. Be sure to check out the recipe at the end of this post for cook instructions.

- Pork loin roast
- Dijon mustard
- Minced garlic
- Oregano
- Rosemary
- Dried thyme
- Jicama
- Celery
- Onion
- Carrots
- Butter
- Beef broth
- Worcestershire
- Xanthan gum
How to Prep Keto Pork Loin and Gravy
If you want to save yourself some time and stress on cooking day, then prep this Keto pork loin ahead of time! One of the beauties of the 5 Dinners 1 Hour meal plans is that the recipes are meant to be prepped ahead of time, saving you time in the kitchen every night and giving you sanity at dinner time!
To begin prepping, first cut the pork loin in 3 chunks. For bigger roasts, cut into even more chunks. Tougher cuts of meats, like roasts, cook much better in the Instant Pot when cut into smaller chunks. This will save you from having to cook it for an hour and a half!
Secondly, it’s time to season the Keto pork loin. Season with salt and pepper, dijon mustard, garlic, oregano, rosemary, and thyme. Add the roast to a large zipper bag if prepping ahead of time.
After that, get those veggies cut up. Chop up the celery and jicama, then add to a separate zipper bag, along with the celery, carrots, and onion.
What is Jicama?
Jicama is a dense root vegetable, which is sometimes referred to as Mexican potato or Mexican turnip, is found in Central America. It has a rough brown skin, with a white, juicy flesh on the inside. For the keto diet especially, it is a great alternative to potatoes, with a starchy, yet sweet taste.
Jicama can be a little intimidating to cut up if you have never done it before, but think of it as a big potato. Start by peeling of the skin with a potato peeler, then cut into small chunks.
How to Cook Keto Pork Loin and Gravy
Once it’s time to cook the keto pork loin, add the butter to the Instant Pot and set to saute on high. Sear the pork loin for about 3 minutes on both sides.
Secondly, add the prepped vegetables, beef broth, and Worcestershire sauce. To get that keto pork loin cooking, set the IP to high pressure for 30 minutes. When it is done cooking, use the quick release to manually release the pressure.
Now you’re almost there! In order to make the gravy for the keto pork loin, add xanthan gum to the liquid in the IP and stir until incorporated. Press the saute button and let it simmer just until thickened.

- 2 lb pork loin roast
- salt and pepper to taste
- 1 t Dijon mustard
- 2 t minced garlic
- 1/2 t dried oregano
- 1 t dried rosemary
- 1/2 t dried thyme
- 1 lb jicama
- 1 celery stalk
- 1/2 C frozen onion
- 1/2 C frozen carrots
- 2 T butter
- 1/2 C beef broth
- 2 T worcestershire
- 1/4 t xanthan gum
Instructions
- Cut roast in half and season pork roast with salt and pepper. Add to large zipper bag. Add next 5 ingredients (through thyme) to bag and squish around to mix.
- Remove skin from jicama and cube. Chop celery. Add jicama, celery, onions, and carrots to a separate zipper bag.
- Turn Instant Pot to sautè and add butter to the pot. Once hot, sear the pork loin for about 3 minutes on each side.
- Add vegetables from bag, beef broth, and Worcestershire. Pressure cook on high pressure for 30 minutes. Use quick release when finished cooking.
- Remove pork loin from pot. Press sauté and add xanthan gum and stir. Simmer until thickened.
- Slice pork loin and serve with vegetables and gravy.
