What is Gnocchi?
Gnocchi is made out of potato and flour and has a consistency much like a dumpling. Cooked potatoes are mashed and mixed with flour to create a dough that is then formed into small pieces with ridges to hold soup, making Gnocchi the perfect little flavor bombs. In Italian cooking, Gnocchi is often an alternative to pasta and can be much more filling.
What to Serve With Creamy Chicken Gnocchi
The most common side dish served with Creamy Chicken Gnocchi would be a salad. Simple salad greens with a house dressing pairs great with this recipe, as it is quick and doesn’t take away from the soup. Breadsticks can be a favorable choice also.
Is Gnocchi Gluten-Free?
Most store-bought Gnocchi is not gluten-free, but check the organic section of your local supermarket to find gluten-free Gnocchi. You can also make homemade Gnocchi using rice flour instead of wheat flour if you can’t find any gluten-free options at the grocery store.
How to Make it in the Instant Pot
You will be using the saute setting and the soup setting on your Instant Pot for this recipe. Make sure all of your vegetables are cut or shredded beforehand.
First, set it on the saute setting and add in the garlic, onion, and chicken broth. If you choose to use carrots or celery, you can add them in at this point as well. Saute for about 5 minutes before the chicken is added.
Once the chicken is added, the Instant Pot setting can be changed to soup for about 15 minutes. Lastly, change the setting back to saute and add in the Gnocchi, half and half or heavy cream, spinach, and flour. Stir occasionally over 5 minutes and you have a delicious homemade soup for everyone to enjoy!
