Breakfast for Breakfast or Breakfast for Dinner? Either way, this recipe is a hit!
1/4-1/2 lb deli sliced ham (8-12 slices)
1 ½ C. shredded Mexican cheese blend
8-12 flour tortillas
1- 1½ C. half & half
6 eggs
1 T flour
½ C. shredded Mexican cheese blend.
Place one slice of ham on each flour tortilla (assembly line style).
Top each tortilla equally with cheese.
Roll and place in 9×13 baking dish sprayed with non stick spray.
Top with remaining cheese.
Add next 3 ingredients to blender and blend. I used a blender bottle because I did not want the big blender in the refrigerator. You know, the kind with the little spring ball inside that you use for protein shakes. This way you get your workout in while you cook. All I could think of when shaking this was the commercial for the “Shake Weight”. Makes me laugh out loud every time I see it.
Pour egg mixture over enchiladas. If making ahead, pour egg mixture over enchiladas right before baking.
Bake covered at 350 degrees for 45 minutes or until egg mixture has set.
Garnish with sliced green onions (to make it pretty) and enjoy!
This would be great to make ahead and just reheat each day for breakfast.
