Servings: 4-6 |
Ingredients
Prep
- 4 salmon fillets
- 1 zucchini
- 2 summer squash
- 2 T olive oil
- 2 T lemon juice
- 1 t ground cumin
- 2 t oregano
- 2 t sesame seeds
- 1 t salt
- 1/4 t crushed red pepper flakes
On Cooking Day
- 2 bag frozen brown rice steamer
Instructions
To Assemble
- Cut the salmon, zucchini and summer squash into large bite-sized chunks and place in large zipper bag.
- Add all other ingredients into bag with salmon and veggies. Zip to seal. Shake gently and squish to combine.
To Cook
- Pour contents of bag onto a baking sheet sprayed with non stick spray and broil for 3 - 5 minutes on each side or until salmon is flakey and veggies are crisp-tender.
- Cook rice according to package directions.
