If you want an easy and healthy dinner, then you need a to try out this slow cooked vegetable chili!! I can not think of an easier way to get your dose of daily veggies in and this dish rocks!!!
Ingredients
Prep
- 2 zucchini medium size
- 30 oz can black beans
- 1 C frozen chopped carrots
- 1 C frozen chopped onions
- 1 C frozen corn
- 2 T minced garlic
- 1 T chili powder
- 1 t cumin
On Cooking Day
- 4 C chicken broth or vegetable broth
- 6 C salad greens
Instructions
To Assemble
- Chop zucchini into bite size pieces and place in large zipper bag.
- Rinse and drain black beans and add to separate zipper bag.
- Add remaining ingredients to beans. Zip and squish to mix.
To Cook
- Add contents of bag (not zucchini) to slow cooker along with broth. Cook on low 6-7 hours.
- During last 20 minutes, add zucchini.
- Serve with green salad.
