Slow Cooked Roasted Chicken
Slow cooked roasted chicken combines an herb coating with the flavors of paprika, thyme, onion, garlic, and chili powder. It is cooked with baby new potatoes, making it a complete meal, perfect for when you are in the mood for healthy comfort food!
Tips for Cooking a Whole Chicken
If you have never cooked a whole chicken before, it can be a little intimidating. No worries, though, because this slow cooked roasted chicken makes it so simple a new cook can do it.
Perform a gizzardectomy – Before you begin, you need to take out the insides of the chicken. I know, it is gross, but you don’t want that stuff falling out when you go to cut into it later (ewww)! Reach into the cavity of the chicken and pull out the gizzards and other lovely insides.
To truss or not to truss – You might have seen people tie up the chicken’s legs with twine. This gives the chicken a more compact shape while cooking and some say it makes the white meat more moist. This step is totally optional, though, so don’t feel like you need to go watch a YouTube video on how to tie up a chicken. If you want to feel like Julia Childs, then go for it, but if you like quick and easy, like I do, just season that chicken and get it into the slow cooker!
Crispy skin – One of the benefits of the slow cooked roasted chicken is that you don’t have to use your oven and the chicken will turn out super moist and falling off the bone. If you like crispy skin, though, you will need to finish off the chicken under the broiler. For crispy skin, drizzle the chicken with a little olive oil after it’s finished and put under the broiler on high for a few minutes.
Ingredients Needed for Slow Cooked Roasted Chicken:
- paprika
- chili powder
- onion powder
- thyme
- garlic powder
- salt and pepper to taste
- whole chicken
- baby new potatoes
How to Make Slow Cooked Roasted Chicken
To begin, mix together all of the spices: paprika, chili powder, onion powder, thyme, garlic powder, and salt and pepper.
After that, it’s time to get the roasted chicken in the slow cooker! Wash the potatoes and place them at the bottom of the slow cooker.
Lastly, rub the seasoning blend all over the chicken. If you really want to infuse the flavor, also rub the seasoning under the skin.
Cook the slow cooked roasted chicken on low for 8-10 hours. Although it might be tempting, you do not need to add any liquid to the slow cooker because the chicken will produce liquid on its own.

Ingredients
- 1 T paprika
- 2 t chili powder
- 1 t onion powder
- 1 t thyme
- 1/2 t garlic powder
- salt and pepper to taste
- 1 whole chicken
- 1 1/2 lbs baby new potatoes
- 6 C salad greens
Instructions
- Mix all ingredients in a small bowl with lid.
- Add new potatoes to bottom of slow cooker.
- Place chicken on top of potatoes and sprinkle with seasoning.
- Cook on low for 8 - 10 hours.
- Serve with salad greens and potatoes. *Potatoes may also be mashed.
