One pot Cajun Beans dinner! Serve with some frozen steamers brown rice, corn, cornbread or a salad…..if you want some green on your plate.
Just toss it all in the slow cooker. I use frozen meal helpers like frozen chopped onion and bell pepper. They are easier and so far, have as much flavor as fresh. I even found organic varieties.
How would you like to come home from work and just scoop dinner onto your plate?
Be sure to adjust the Cajun seasoning according to your spice tolerance. I used 1 tablespoon and it was just right for us. If you can take the heat, then crank it up! If you are feeding mild palates, cut it in half but be sure to salt and pepper it well so it is not too bland.
To add even more “kick”, add lots of fresh garlic!
Ingredients
- 1 lb smoked sausage
- 8 oz tomato sauce
- 1 T Worcestershire sauce
- 2 T Cajun seasoning
- 1/2 C frozen chopped onion
- 1/2 C frozen chopped bell pepper
- salt and pepper to taste
- 1 lb dried red beans
- 7 C water
- 6 C salad greens
- 2 bag frozen rice steamer
Instructions
- Chop sausage into 1 inch pieces and add with remaining ingredients to a large zipper bag. Zip to seal and squish around to mix.
- Pour sausage mixture into slow cooker along with dried red beans and water. Cook on low for 8 - 10 hours.
- Cook rice according to package directions.
- Serve with green salad.
