Another easy taco recipe cooked int he slow cooker. This time it is chicken enchilada flavored. Can a taco be enchilada flavored? I say yes, yes, it can…..and it was. You gotta go for it and try out this Enchilada Chicken Tacos recipe!!
Slow cooking makes the flavors intensify by like 1000. Well, maybe not 1000 but it is way more flavor than marinating and cooking on the grill or in a skillet. Plus it is nice to come home to dinner 80% done. Just shred the meat and dress the tacos. Easy!
This is great to make in big batches and freeze for even easier go-to dinners on super lazy busy nights.
Do you like your tacos crunchy or soft? Crunchy for me, please.
Ingredients
- 6 boneless chicken breasts
- 2 t diced jalapenos
- 1/2 C frozen chopped onions
- 14 oz can diced tomatoes
- 15 oz can enchilada sauce
- 4 oz can diced green chilies
- 2 Roma tomatoes
- 12 taco shells or flour tortillas
- 1 C shredded cheddar cheese
- 10 C salad greens
- 2 avocados
Instructions
- Place first 6 ingredients in a zippered plastic bag. Zip to seal.
- Chop tomatoes and store in small bowl with lid.
- Pour bag contents into slow cooker and cook on low for 8 hours.
- Remove chicken and shred into a medium bowl. Add about 1 cup of the chicken sauce from the crock pot.
- Serve in taco shells topped with tomatoes, shredded cheese, salad and avocado.
