White Bean and Sausage Rigatoni - C
salad

Ingredients

Prep
  • 8 oz rigatoni
  • 12 oz kielbasa
  • 10 oz frozen chopped spinach
  • 3 oz can tomato paste
  • 1/4 C red wine or chicken broth
  • 30 oz canned diced tomatoes with basil, garlic, oregano
  • 15 oz canned great northern beans
  • salt and pepper to taste
On Cooking Day
  • 1/3 C finely grated Parmesan cheese
  • 6 C salad greens

Instructions

To Assemble
  1. Cook pasta according to package directions. Cut sausage into rounds. Thaw and drain spinach. Drain beans. Add all these to a large bowl.
  2. Add all remaining ingredients to the bowl and mix well. Then pour mixture into a greased baking pan. Cover.
To Cook
  1. Bake covered dish in 375 degree oven for 30-35 minutes or until heated through. Remove, sprinkle with cheese and bake another 5 minutes until cheese is melted.
  2. Serve with side salad.
