Turkey Taco Meatloaf - CE
Mashed cauliflower and green salad

Ingredients

Prep
  • 1 lb ground turkey
  • 1 C frozen pepper and onion blend
  • 1/2 C frozen corn
  • 1 egg
  • 1/4 C quick oats
  • 1 T taco seasoning
  • 1/2 C shredded cheese
  • 1/2 C salsa
On Cooking Day
  • 1/2 C cheddar cheese
  • 16 oz frozen cauliflower
  • 1 T milk
  • 6 C salad greens

Instructions

To Assemble
  1. Combine first 6 ingredients in a large bowl. Squish with your hands to mix, using gloves if you prefer.
  2. Place half the mixture into a 8 x 8 baking dish sprayed with non stick spray and press to form a loaf. Sprinkle cheese on top then place the remaining meat mixture on top. Top with salsa.
  3. Cover with plastic wrap.
To Cook
  1. Bake at 375 for 40 minutes. Remove and add cheese and place back in oven until cooked through and cheese is melted. About 15 minutes.
  2. Cook cauliflower according to package directions.
  3. Mash cauliflower with milk. Add salt and pepper to taste.
  4. Serve with green salad.
