Ingredients
Prep
- 1 can black beans
- 6 pre-formed hamburger patties
- 2 C frozen corn
- 1 pint cherry tomatoes
- 1 C shredded Monterrey jack cheese
- 1/4 C fresh cilantro chopped
- 1 C frozen chopped onion optional
- 2 t minced garlic
- 1 T chili powder
- 6 foil sheets cut to 18"
On Cooking Day
- 1 bag tortilla chips
- 1 pkg hamburger buns optional
- 6 C salad greens
- 1/2 C salsa
Instructions
To Assemble
- Rinse and drain black beans.
- Tear foil into six 18 inch square sheets. Place each hamburger patty on a foil square.
- Add equal amounts of black beans, corn, tomatoes to the side of the meat patty. Top patty with cheese. Sprinkle with cilantro, onions, chili powder and garlic.
- Fold foil over and roll up edges to create a packet. Store on a baking sheet in the refrigerator.
To Cook
- Grill packets on outdoor grill or bake in a 400 degree oven on large baking sheet (in foil packets) for 20 minutes or until meat is cooked through.
- Serve with green salad, chips and salsa.
