Tex Mex Burger Packets – CE
Green salad, chips and salsa

Ingredients

Prep
  • 1 can black beans
  • 6 pre-formed hamburger patties
  • 2 C frozen corn
  • 1 pint cherry tomatoes
  • 1 C shredded Monterrey jack cheese
  • 1/4 C fresh cilantro chopped
  • 1 C frozen chopped onion optional
  • 2 t minced garlic
  • 1 T chili powder
  • 6 foil sheets cut to 18″
On Cooking Day
  • 1 bag tortilla chips
  • 1 pkg hamburger buns optional
  • 6 C salad greens
  • 1/2 C salsa

Instructions

To Assemble
  1. Rinse and drain black beans.
  2. Tear foil into six 18 inch square sheets. Place each hamburger patty on a foil square.
  3. Add equal amounts of black beans, corn, tomatoes to the side of the meat patty. Top patty with cheese. Sprinkle with cilantro, onions, chili powder and garlic.
  4. Fold foil over and roll up edges to create a packet. Store on a baking sheet in the refrigerator.
To Cook
  1. Grill packets on outdoor grill or bake in a 400 degree oven on large baking sheet (in foil packets) for 20 minutes or until meat is cooked through.
  2. Serve with green salad, chips and salsa.
