Ingredients
Prep
- 3 C cooked cubed chicken from deli rotisserie
- 1 T chili powder
- 1 t ground cumin
- 1 t onion powder
- 1 can black beans drained
- 8 oz frozen corn
- 1 1/2 C shredded cheddar cheese
- 24 wonton wrappers or flour tortillas
On Cooking Day
- 6 C salad greens
- 2 avocados
- 1 C sour cream
Instructions
To Assemble
- Add the first 6 ingredients to a large bowl, stir to mix.
- Spray 12 count muffin tin with non stick spray. Place 2 wonton wrappers in each cup, pressing up the sides. If using flour tortillas, cut into 4 inch circles or squares.
- Scoop chicken mixture into each wonton. Sprinkle with cheese. Cover with plastic wrap.
To Cook
- Bake uncovered at 375 degrees for 10 - 12 minutes or until wontons are golden and centers are warm.
- Garnish with sour cream and avocado.
- Serve with green salad.

*for crisper wonton bottoms, cook unfilled for 10 minutes, fill, then continue as directed in recipe.
