Stuffed Pepper Casserole - CE

Ingredients

Prep
  • 1 lb lean ground turkey
  • 1 C frozen chopped onion
  • 2 C frozen chopped bell peppers
  • 3 C frozen brown rice steamers
  • 14 oz canned diced tomatoes
  • 3/4 C shredded cheddar cheese
  • 1 T dried oregano
  • 1 t garlic salt
  • 1/4 t crushed red pepper
  • salt and pepper to taste
On Cooking Day
  • 1 bag frozen broccoli steamers
  • 1 bag frozen carrots
  • 3/4 C shredded cheddar cheese

Instructions

To Assemble
  1. Cook ground turkey in skillet and cook rice according to package directions.
  2. Put all ingredients in a large bowl and stir to combine. Add mixture to a greased baking dish and cover with foil.
To Cook
  1. Bake covered at 375 for 25-30 minutes or until warmed through. Remove foil and sprinkle cheese on top. Place under broiler until cheese is melted; about 2 minutes.
  2. Prepare broccoli and carrots per package instructions. Serve.
