Stuffed Acorn Squash - CE

Ingredients

Prep
  • 3 acorn squash
  • 1 apple medium
  • 1 1/2 lb ground turkey cooked
  • 1 1/2 C baby portabella mushrooms chopped
  • 2 t dried rosemary or fresh
  • 1 1/2 t garlic powder
  • salt and pepper to taste
  • 1 C shredded cheddar cheese
On Cooking Day
  • 2 pkg brown rice steamer
  • 6 C salad greens

Instructions

To Assemble
  1. Cut squash in half and scoop out seeds (microwave for 3 minutes to make it easier to cut). Then microwave each half about 6-8 minutes or until squash has softened. Then place squash in a baking dish.
  2. Cut apple into bite size pieces and place in a large bowl. Scoop out the cooked center of the squash and place in bowl with the apple. Add next 5 ingredients and mix well.
  3. Fill each squash with mixture then top with cheese. Store in a large container with lid.
To Cook
  1. Place covered squash dish in 350 oven for 30 minutes. Remove cover and broil for 2-3 minutes or until cheese is melted and browned.
  2. Prepare rice according to package directions. Serve with salad.
