Ingredients
Prep
- 6 boneless pork chops thick cut
- 3 zucchini
- 1 red onion
- 2 t minced garlic
- 1 1/2 t chili powder
- 1 t smoked paprika
- 1/4 t cayenne pepper more if desired
- salt and pepper to taste
- 2 C cherry tomatoes
- 2 T olive oil
On Cooking Day
- 2 bag frozen brown rice steamers
- 6 C salad greens
Instructions
To Assemble
- Chop pork chops, zucchini and onion into 2 inch cubes and add to large zipper bag.
- Add next 7 ingredients to bag. Zip to seal and squish around to mix.
To Cook
- Pour pork and vegetables onto large baking sheet sprayed with non stick spray. Broil in oven for 5 - 9 minutes or until pork is cooked through.
- Cook rice according to package directions.
- Serve with green salad.
