Ingredients

Prep
  • 3 lb Pork Roast
  • salt and pepper to taste
  • 2 T olive oil
  • 2 T minced garlic
  • 1 C frozen chopped onions
  • 3 T chili powder
  • 2 t ground coriander
  • 1 T cumin
  • 1/4 C apple cider vinegar
  • 14 oz canned diced tomatoes
  • 2 T chipotle in adobo
  • 3 T molasses
On Cooking Day
  • 1 C chicken broth
  • 12 slider buns
  • 1 bag coleslaw mix
  • 1/4 C sour cream
  • 1/4 C mayonnaise
  • 1 T lime juice

Instructions

To Assemble
  1. Cut pork roast into 4 chunks.
  2. Add all ingredients to large zipper bag. Zip to seal and squish around to mix.
To Cook
  1. Add bag ingredients and chicken broth to Instant Pot.
  2. Press manual button and set for 60 minutes. Allow to natural release for 10 minutes. Shred pork.
  3. Mix together coleslaw, sour cream, mayo, and lime juice in a bowl
  4. Serve shredded pork on slider buns with coleslaw mix.
