Ingredients
Prep
- 2 lbs boneless chicken thighs
- 1 T chili powder
- 1 t cumin
- 1/2 t paprika
- 1/8 t pepper
- 3 T lime juice
On Cooking Day
- 1 C chicken broth
- 2 T cilantro chopped
- 1/2 C heavy cream
- 1 T cornstarch
- 1 T water
- 2 bag steamers rice
- 10 C salad greens
Instructions
- Add first 6 ingredients to a large zipper bag. Zip and squish to mix and coat chicken.
- Add chicken to slow cooker along with broth. Cook on low for 5-6 hours.
- Mix the cornstarch and water and add to slow cooker along with cilantro and heavy cream.
- Cook 30 minutes on high or until sauce thickens a bit.
- Serve over rice with green salad.
