Ingredients
Prep
- 6 sweet onion
- 4 T butter
- 1/4 t sugar
- 2 t dried thyme
- salt and pepper to taste
On Cooking Day
- 6 C beef broth
- 1 bay leaf
- 1/2 C dry white wine
- 1 loaf french bread
- 1 C shredded Swiss cheese
Instructions
To Assemble
- Thinly slice onions and place in a container with lid. Place butter, sugar, thyme, and salt and pepper in a bowl with lid.
To Cook
- Melt butter mixture in microwave. Pour onions in slow cooker and pour butter mixture over them. Cook on high 4 hours (low 8 hours) or until onions have caramelized.
- Stir in beef broth, bay leaf, and wine and cook on high another 2 hours (low 4 hours). Remove bay leaf.
- Slice french bread and top with cheese. Broil for 3 minutes or until cheese is melted and brown. Place in bowl on top of soup. Add extra cheese to soup if desired.
