Slow Cooked Spicy Gumbo - CE

Ingredients

Prep
  • 1 lb Andouille sausage or any smoked sausage
  • 2 T olive oil
  • 3 T minced garlic
  • 2 T Cajun seasoning
  • 4 C frozen chopped onion celery pepper mix
  • 28 oz fire roasted diced tomatoes
  • 1/4 C butter
  • 1/4 C cornstarch
  • 1/4 C heavy cream or half and half
On Cooking Day
  • 4 C chicken broth
  • 1 lb large raw peeled shrimp
  • 3 bag frozen brown rice steamer
  • 8 C salad greens

Instructions

To Assemble
  1. Slice sausage into bite size pieces and add to large zipper bag.
  2. Add next 5 ingredients to sausage. Zip and shake to mix.
  3. Mix last 3 ingredients in a small bowl with lid.
To Cook
  1. Pour sausage mixture into slow cooker along with chicken broth and cook on low for 4 hours.
  2. Turn slow cooker to high and add shrimp and prepped cream mixture during last 10 minutes of cook time. Watch closely to not overcook.
  3. Cook rice according to package directions. Serve with salad.
