Ingredients
Prep
- 3 boneless chicken breasts
- 28 oz canned diced tomatoes
- 1 C frozen chopped bell peppers
- 1 C frozen chopped onion
- 1 T minced garlic
- 1 T Cajun seasoning
- 2 T cornstarch
- salt and pepper to taste
On Cooking Day
- 8 oz penne pasta
- 1 C chicken broth
- 1/2 C heavy cream
- 10 salad greens
Instructions
To Assemble
- Chop chicken into bite size pieces and add to large zipper bag along with remaining ingredients. Zip to seal.
To Cook
- Pour soup mixture into slow cooker along with chicken broth and cook on low for 6-8 hours. Turn to high and add pasta. Mix well and cook 20-30 minutes or until pasta is cooked.
- Mix in heavy cream and serve with salad.
