Slow Cooked BBQ Beef Cornbread Casserole - B

Ingredients

Prep
  • 2 lbs stew meat
  • 1 C frozen peppers and onions
  • 12 oz frozen corn
  • 1 C BBQ sauce
  • 14 oz can diced tomatoes
  • 16 oz cornbread mix
  • 1 egg
  • 2/3 C milk
On Cooking Day
  • 6 C salad greens

Instructions

To Assemble
  1. Mix first 5 ingredients in large zipper bag. Zip to seal and squish around to mix.
  2. Mix last 3 ingredients in medium bowl. **All cornbread mixes vary, please follow directions on package. Cover and store until ready to cook.
To Cook
  1. Pour meat mixture into slow cooker.
  2. Pour cornbread batter over meat.
  3. Cook on low 6 hours.
  4. Serve with green salad.
