Slow Cooked Balsamic Glazed Pork Loin - C
salad and baked potatoes

Ingredients

Prep
  • 2 lb pork tenderloin
  • 1 t dried thyme
  • 1 t minced garlic
  • salt and pepper to taste
  • 1/2 C brown sugar
  • 1 T cornstarch
  • 1/4 C balsamic vinegar
  • 2 T soy sauce
  • 2 T water
  • 6 potatoes small-for baked potatoes
On Cooking Day
  • 1/2 C water
  • 6 C salad greens
  • potato toppings (butter, sour cream, cheese, bacon bits)

Instructions

To Assemble
  1. Add first 4 ingredients to a large zipper bag. Zip and shake to mix to coat pork well.
  2. Mix next 5 ingredients in a bowl with lid.
  3. Wrap potatoes in foil.
To Cook
  1. Pour pork mixture and water into slow cooker, cover with foil and place foil wrapped potatoes on top, cook on low for 6-8 hours. Remove potatoes.
  2. Microwave sugar mixture until sugar is dissolved. Pour half of sauce over pork and serve the remaining half as a dipping sauce.
  3. Top baked potatoes with desired toppings, slice pork and serve with salad.
