Ingredients
Prep

2 lb pork tenderloin

1 t dried thyme

1 t minced garlic

salt and pepper to taste

1/2 C brown sugar

1 T cornstarch

1/4 C balsamic vinegar

2 T soy sauce
-
2 T water
-
6 potatoes small-for baked potatoes
On Cooking Day

1/2 C water
-
6 C salad greens
-
potato toppings (butter, sour cream, cheese, bacon bits)
Instructions
To Assemble
Add first 4 ingredients to a large zipper bag. Zip and shake to mix to coat pork well.
Mix next 5 ingredients in a bowl with lid.

To Cook
Pour pork mixture and water into slow cooker, cover with foil and place foil wrapped potatoes on top, cook on low for 6-8 hours. Remove potatoes.
Microwave sugar mixture until sugar is dissolved. Pour half of sauce over pork and serve the remaining half as a dipping sauce.
Top baked potatoes with desired toppings, slice pork and serve with salad.
