Ingredients
Prep
- 15 oz canned baby corn
- 16 oz broccoli florets
- 10 oz frozen chopped carrots
- 1 lb boneless chicken breasts
- 2 T soy sauce or liquid aminos
- 1 T sesame oil
- 1 t ground ginger
- 2 T minced garlic
- 2 T honey
- 1 T hot sauce
- 1/4 t pepper
On Cooking Day
- 6 egg rolls
- 6 fortune cookies
- 2 bag steamers rice
Instructions
To Assemble
- Drain mini corn and add to large zipper bag along with broccoli and carrots.
- Chop chicken into bite size pieces and add to another large zipper bag.
- Mix last 7 ingredients in a small bowl. Pour half over chicken and half over vegetables. Zip bags and shake to mix.
To Cook
- Pour chicken and vegetables onto a large baking sheet sprayed with non stick spray.
- Bake in a 400 degree oven for 15-20 minutes or until chicken is cooked through.
- Cook rice and egg rolls according to package directions. Serve with fortune cookies.
