Ingredients

Prep
  • 6 boneless chicken breasts
  • 2 t ground marjoram
  • 3 T olive oil
  • 2 T lemon juice
  • 2 t minced garlic
  • salt and pepper to taste
  • 1 bunch asparagus
  • 5 C cauliflower florets
  • 1/4 C olive oil
  • 3 t minced garlic
  • 2 T lemon juice
On Cooking Day
  • 2 T grated Parmesan cheese

Instructions

To Assemble
  1. Chop chicken into bite size pieces and add to large zipper bag.
  2. Add next 5 ingredients to bag. Zip to seal and squish around to mix.
  3. Cut woody ends off asparagus and discard. Chop asparagus into 2 inch pieces and add to another large zipper bag with cauliflower florets.
  4. Add next 3 ingredients plus salt and pepper to taste. Zip to seal and squish around to mix.
To Cook
  1. Pour chicken, asparagus and cauliflower onto a large baking sheet sprayed with non stick spray.
  2. Roast in 400 degree oven for 20 - 25 minutes or until chicken is cooked through.
  3. Sprinkle cauliflower with grated Parmesan cheese.
