Mini Spinach Lasagna Cups - C

Ingredients

Prep
  • 5 oz frozen chopped spinach
  • 1 1/4 C ricotta cheese
  • 1 egg
  • 1 t Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • 36 wonton wrappers found in produce section
  • 1 C spaghetti sauce
  • 1 C shredded mozzarella cheese
On Cooking Day
  • 1 pkg garlic bread
  • 6 C salad greens

Instructions

To Assemble
  1. Thaw spinach and squeeze dry.
  2. Mix spinach and next 4 ingredients to a large bowl.
  3. Spray a 12 ct. muffin tin with non stick spray. Place two wonton wrappers in each cup.
  4. Spoon spinach mixture evenly into each cup.
  5. Spoon ½ of the spaghetti sauce evenly over the cups.
  6. Top with a third wonton wrapper then remaining sauce and shredded mozzarella. Cover with plastic wrap.
To Cook
  1. Remove plastic wrap and bake in a 375 degree oven for 12-15 minutes or until hot and bubbly.
  2. Cook garlic bread according to package directions.
  3. Serve with salad and garlic bread.
