Maryland Style Salmon Cakes - CE
Sweet potato fries

Ingredients

Prep
  • 1/2 C frozen chopped bell pepper
  • 29 oz salmon
  • 1 T Old Bay Seasoning
  • 1/4 C almond flour oatmeal works too
  • 2 large egg
  • 1 t dried minced onion
  • 1/2 t dill
  • 1 t minced garlic
  • 2 T Greek yogurt
On Cooking Day
  • 1 avocado
  • 1 T lime juice
  • 1 t cilantro
  • 1/2 t minced garlic
  • 1/4 t sea salt
  • 16 oz frozen sweet potato fries

Instructions

To Assemble
  1. Combine all ingredients in a medium bowl.
  2. Pat out into patties that are about 3 inches across and 1 inch thick.
  3. Store in a plastic container with lid with wax paper between the layers.
To Cook
  1. Remove salmon cakes from container and place on a baking sheet sprayed with non stick spray. Bake in oven at 325 for 20 minutes or until brown.
  2. Prepare fries according to package directions.
  3. Remove avocado from skin and mash. Stir in garlic, lime juice, cilantro and sea salt. Serve as a dip for the cakes.
