Linguine with Clam Sauce - CE

Ingredients

Prep
  • 2 garlic cloves fresh
  • 2 T extra-virgin olive oil
  • 1 C fresh chopped parsley
  • salt to taste
On Cooking Day
  • 16 oz whole wheat linguine noodles
  • 26 oz chopped clams
  • 1/8 t crushed red pepper flakes optional
  • 6 C green salad
  • 6 whole wheat dinner rolls

Instructions

To Assemble
  1. Finely chop garlic cloves and add to a small bowl with a lid. Add the next 3 ingredients to the bowl. Stir and cover.
To Cook
  1. Prepare whole wheat linguine per package instructions.
  2. Add garlic and parsley mixture to a small saucepan and cook over medium heat until warm and fragrant; this will only take a few minutes.
  3. Add undrained clams to the saucepan and bring to a boil over medium high heat. Reduce the heat and allow to simmer until pasta finishes cooking. Add the crushed red pepper if desired.
  4. Drain the pasta and return it to the pot. Pour the clam sauce over the pasta and toss to coat. Serve with salad and dinner rolls.
