Lemon Chicken Tenders - C
Peas and mashed potatoes

Ingredients

Prep
  • 1/2 t ground paprika
  • salt and pepper to taste
  • 1 C Italian bread crumbs
  • 2 egg
  • 18 chicken tenders
  • 1/2 C sugar
  • 1/2 C lemon juice
  • 1 1/2 t curry powder
On Cooking Day
  • 16 oz frozen peas
  • 2 bag frozen mashed potato steamer

Instructions

To Assemble
  1. Mix first 3 ingredients on a paper plate.
  2. Beat eggs with a fork.
  3. Using tongs, dip each tender in egg then bread crumb mixture. Place in large container with lid. Use wax paper between layers.
  4. Mix last 3 ingredients in a small bowl with lid. This will be the sauce.
To Cook
  1. Bake chicken in 400 degree oven on large baking sheet sprayed with non stick spray for 20 minutes or until cooked through.
  2. Heat lemon sauce mixture in microwave 1 - 2 minutes until bubbly and sugar is dissolved.
  3. Drizzle lemon sauce lightly over chicken and bake 5 more minutes.
  4. Cook peas and potatoes according to package directions.
