Ingredients
Prep
- 12 oz tortilla chips
- 1 lb cooked ground beef
- 1/2 chopped onion
- 28 oz can red enchilada sauce
- 1 C jar salsa
- 4 C shredded Mexican cheese blend divided
- 2 oz black olives chopped or sliced
- 1/4 C green onions
On Cooking Day
- 16 oz refried beans
- 1 pkg spanish rice
- 1 avocado optional
- 1/2 C sour cream optional
Instructions
To Assemble
- Break the tortilla chips up in the bag and add them to a large bowl. Add the next four ingredients and half of the cheese to the bowl and combine well.
- Press the tortilla and meat mixture into a greased casserole dish. Sprinkle the top of the enchiladas with the remaining cheese and olives. Cover with foil.
- Dice the green onions and store in a small bowl with a lid.
To Cook
- Bake covered at 350 for 35-45 minutes or until the casserole is warmed through. Remove the foil and continue to bake for 10 minutes or until the cheese is melted.
- Prepare refried beans and spanish rice per package instructions. Sprinkle the casserole with green onions, and serve with avocado and sour cream as desired.
