Lazy Enchiladas – C

Ingredients

Prep
  • 12 oz tortilla chips
  • 1 lb cooked ground beef
  • 1/2 chopped onion
  • 28 oz can red enchilada sauce
  • 1 C jar salsa
  • 4 C shredded Mexican cheese blend divided
  • 2 oz black olives chopped or sliced
  • 1/4 C green onions
On Cooking Day
  • 16 oz refried beans
  • 1 pkg spanish rice
  • 1 avocado optional
  • 1/2 C sour cream optional

Instructions

To Assemble
  1. Break the tortilla chips up in the bag and add them to a large bowl. Add the next four ingredients and half of the cheese to the bowl and combine well.
  2. Press the tortilla and meat mixture into a greased casserole dish. Sprinkle the top of the enchiladas with the remaining cheese and olives. Cover with foil.
  3. Dice the green onions and store in a small bowl with a lid.
To Cook
  1. Bake covered at 350 for 35-45 minutes or until the casserole is warmed through. Remove the foil and continue to bake for 10 minutes or until the cheese is melted.
  2. Prepare refried beans and spanish rice per package instructions. Sprinkle the casserole with green onions, and serve with avocado and sour cream as desired.
