Ingredients
Prep
- 1 1/2 lb medium shrimp peeled and deveined
- 2 T enchilada seasoning or taco seasoning
- 3 Roma tomatoes
- 1 onion
- 1 bunch cilantro
- 2 T lime juice
- 1/4 t salt
On Cooking Day
- 12 tostada shells
- 3 avocados
- 2 T lime juice
- 1/2 t salt
- 10 C salad greens
- 1/2 C salsa optional
Instructions
To Assemble
- Add shrimp to large zipper bag with enchilada seasoning. Zip and shake to mix.
- Chop tomatoes, onion and cilantro (cilantro should equal 1/2 cup chopped) to a medium/small bowl with lid.
- Add last 2 ingredients to tomato mixture and mix well. Cover with lid.
To Cook
- Pour shrimp into a hot skillet and cook 5-7 minutes or until pink and cooked through.
- Peel and mash avocados with lime juice and salt.
- Top each tostada with mashed avocado, shrimp and tomato mixture.
- Serve with salad.
