Crispy Hummus Chicken with Broccoli and Peppers - C

Ingredients

Prep
  • 2 bell peppers
  • 12 oz broccoli florets
  • 1 1/2 T olive oil
  • 6 chicken cutlets thin breasts
  • 1 1/2 C roasted red pepper hummus
  • 1 C Panko breadcrumbs
  • 1 1/2 t oregano
  • 1 1/2 t paprika
  • 3/4 t cayenne pepper
  • salt and pepper to taste
On Cooking Day
  • 8 C salad greens
  • 2 bag steamers brown rice

Instructions

To Assemble
  1. Slice bell peppers and add with broccoli to a (large enough to fit) baking dish sprayed with non stick spray. Drizzle with olive oil and sprinkle with garlic salt and pepper. Toss to mix well.
  2. Lay chicken on top of vegetables and spread hummus all over chicken.
  3. Mix last 5 ingredients in a small bowl and sprinkle over everything. Cover with foil.
To Cook
  1. Bake uncovered in a 400 degree oven for 25-35 minutes or until chicken is cooked through.
  2. Cook rice according to package directions and serve with salad.
