Chicken Noodle Soup Casserole - C

Ingredients

Prep
  • 2-3 celery stalks
  • 1/2 C frozen chopped onion
  • 1 C frozen chopped carrots
  • 2 t minced garlic
  • 2 C fresh spinach
  • 6 oz egg noodles
  • 1 1/2 lbs boneless chicken breasts
  • 3 C chicken broth
  • 1 t Italian seasoning
  • salt and pepper to taste
On Cooking Day
  • 1 pkg dinner rolls

Instructions

To Assemble
  1. Chop celery into small pieces. Add celery into a large bowl with the next 5 ingredients. Mix well.
  2. Lightly grease a 9x13 casserole dish and pour noodle mixture into dish.
  3. Place the chicken breasts on top of mixture. Add broth, Italian seasoning, salt and pepper to the casserole dish. Cover tightly with foil.
To Cook
  1. Bake covered in a 400 degree oven for 35-40 minutes.
  2. Uncover and stir, making sure the noodles get tossed in any remaining broth. Place back in the oven uncovered for an additional 10 minutes.
  3. Remove from oven and shred the chicken into the dish. Mix well.
  4. Serve with dinner rolls.
